Today I will share my recipe for my vegan breakfast muffins. They are sugar-free and very healthy. I often make them in busy periods because they are such an easy and quick meal and perfect to take with you to work/school.
I like to eat them just plain and basic but sometimes I also like them with jam or a yoghurt sauce and some fruits. They are quite a filling meal as well!
Vegan breakfast muffins ( 3-4 muffins)
– 2,5 cups oats
– almond milk (enough to cover the oats)
– 3 tea spoons baking powder
– your favorite superfoods
– cinnamon
– vanilla extract
– sunflower oil
– muffin tin
Preheat the oven at 220 degrees celsius. Put the oats in a bowl. Add almond milk, enough to cover the oats. Leave the bowl and let it stand for twenty minutes.
After twenty minutes drain the oats from the almond milk and add 3 teaspoons of baking powder to the oats mixture. Then add your favorite superfoods. I like to use goji berries , raw cocoa nibs ,raisins, chia seed and hennep seeds. Also add two teaspoons cinnamon and one teaspoon vanilla extract. If you like it sweeter you can add a little agave sirup. Stir all the ingredients.
Use some sunflower oil to oil your muffin tin and then spoon the mixture into 3 – 4 tins. Bake for 30 minutes. Enjoy your muffins! Add some some jam or fruits or eat them pure.
