Liquid meals: Yes or no? Food inspiration!

Geez, it is cold outside! This week I spent a lot of time at home because of several reasons. I have to study a lot because of exams, I needed to save some money and I don’t really enjoy cycling through the city much when it’s freezing outside. Pretty good reasons to spend a little more time indoors and prepare some delicious meals at home. If you are wondering what to eat for breakfast or lunch this week, try some of these easy meals! Also, a little something that I have experienced lately. Sometimes, when I feel like I need a little detox or cleanse I like to drink smoothies a lot. I’ll have a smoothie for breakfast, a smoothie for lunch and a normal dinner (because I dine with my boyfriend and cook for him). Weekly food inspiration

Hi guys! Here is what I ate this week. I actually only notice now that I had so much smoothies! I had even more but I did not photograph all of them because that would have been a little boring. I really love smoothies! A while ago my blender broke and then I bought a cheap new one and it wasn’t very good. It couldn’t handle big pieces of fruit or nuts and did not blend everything very smooth. It wasn’t fun anymore to experiment with smoothies Now I have a new one with a lot of power and I really enjoy making myself smoothies again! All the meals in this post are vegan, healthy, delicious and easy to prepare! Above: Delish mango. smoothie with mango, raw cocoa nibs, kiwi, pear and rice milk. Topped with chia seeds. I love the raw cocoa and mango combination! Avocado toast. Toasted bread with hummus and avocado. I usually only eat a little bread during the weekend because I really get a ‘bread belly’. Vegan breakfast muffins recipe

Today I will share my recipe for my vegan breakfast muffins. They are sugar-free and very healthy. I often make them in busy periods because they are such an easy and quick meal and perfect to take with you to work/school. I like to eat them just plain and basic but sometimes I also like them with jam or a yoghurt sauce and some fruits. They are quite a filling meal as well! Vegan breakfast muffins ( 3-4 muffins) – 2,5 cups oats – almond milk (enough to cover the oats) – 3 tea spoons baking powder – your favorite superfoods – cinnamon – vanilla extract – sunflower oil – muffin tin Preheat the oven at 220 degrees celsius. Put the oats in a bowl. Add almond milk, enough to cover the oats. Leave the bowl and let it stand for twenty minutes. After twenty minutes drain the oats from the almond milk and add 3 teaspoons of baking powder to the oats mixture. Then add your favorite superfoods. I like to use goji berries …

Food inspiration: healthy and quick.

Every week from now on I will post meals that I had during that week. I like to make myself beautiful, healthy and delicious food. Unfortunately during the day I am often in a rush so I need to keep it simple. These yummy dishes I will show you are all very easy to prepare but still look pretty and taste great! Above: ‘Strawberry yogurt soup with melon mix’. Strawberry soy yoghurt mixed with hazelnut milk to make it thinner, like soup. The soup is filled with mixed types of melon and topped with granola and puffed quinoa. ‘Creamy bell pepper with nuts’. Slighty oil the bell peppers and bake them in the oven for 20 min at 220 C. (Optional with some cheese inside). Afterwards fill the peppers with a spoon of hummus, some green olive tapenade and add some pepper/salt. Eat together with unsalted mixed nuts. ‘Pink breakfast smoothie’. Blend a banana, a handful of (frozen) strawberries, a pear, a teaspoon of chia seeds and almond milk (enough to cover the fruits in …
